I remember as a child I was often here in the public pool, swimming with my girlfriends. Wolfslaar is located in a gorgeous, old palace-style building on the same grounds as the pool, which is perhaps why they used the same name. It’s easy to understand why they have received a Michelin star here because the service is impeccable, the menu is epic when it comes to culinary combinations and, although the prices are high, the value is super. Every single dish looks like a work of art. Of course the menu varies from summer to wintertime and I kick off my meal with three different amuses that tell me immediately that I am in for a very special journey. Let me tell you about the venison with a chocolate sauce that is ‘to die for’ – they don’t overdo it with the sauce, you just get a few drops on your plate since the meat is seasoned. The veggies are very lovely and tasty. Scallops, always magnificent, served with truffle and baby spinach leaves, pimps up the flavor ‘to the max’. The foie gras is another epic dish – beautifully served and a great combination of savory and sweet. The turbot, my favorite fish, is a large, thick piece, which means they really caught this at the right time and is served with lots of beautifully steamed veggies, creamy, buttery mashed potatoes and a foam of distinguished flavor, making this dish perfect. Desserts are served with fruit, caramel, ice cream, mint leaves or other enticing flowers, all on one plate but never too much and this really takes me to heaven. The cheese selection is something they really gave some thought to and from left to right the flavors start with mild and climb up to strong blue cheeses, all served with bread, something sweet and a ‘badass’ red port. No need for me to grade Wolfslaar because my colleagues at the Michelin guide already did. Make no mistake this place is perfection.
